Why we roast at night
The origin story: a five-kilo roaster, a rented garage, and the silence after midnight.
The honest answer: because the phone stops ringing.
Roasting is listening. First crack is a quiet, popcorn-like flutter, and it tells you more than any probe curve — but only if the room lets you hear it. At 2 pm the room never lets you hear it. At 2 am, it’s just you, the drum, and the gas hiss.
We started with a five-kilo machine in a rented garage, roasting after our day jobs. The night shift was a constraint, then a habit, then a philosophy. Small batches, roasted when we can pay attention, shipped within the week.
Nothing about this scales elegantly, and that’s fine. When a lot runs out, the coffee changes with the season. The bag in your hands was roasted by a person who was fully awake for it — ironically, in the middle of the night.
